Baias Wine
In our winery, spanning 18 hectares, we cultivate vineyards ranging from 2 to 17 years old. Situated in the region with limited land, Baia's Wine is considered a medium-sized production. Some vineyards lie near the Ajameti Protected forest area and the Lukhuta river. We exclusively use local indigenous grape varieties - Tsolikouri, Tsitska, Krakhuna for whites, and Aladasturi, Otskhanuri Sapere for reds. Our commitment to organic farming, with pending Bio Certification, means no herbicides or pesticides; instead, we use copper/sulfate for spraying. As a fourth-generation winemaking family, we've preserved traditions. Initially, wine cellars in Imereti were open-air, but climate changes led us to rebuild ours with walls. Our Kvevris, clay vessels resembling bird eggs, are integral to our winemaking. They facilitate fermentation, with the top narrow for oxygen, middle wide for fermentation, and bottom collecting lees, seeds, and skins. Our tools, like Satsnakheli for foot-crushing grapes and ORSHIMO, a traditional decanter, showcase our heritage. New Kvevris from Tkemlovana village boast quality clay, clean water, and precise burning, factors crucial for their perfection. Before harvest, meticulous cleaning, using wild cherry tree sap, ensures quality. Since 2015, we've bottled wines, starting with the "Enterprise Georgia" project and a 5000 lari grant. Our range includes Tsolikouri, Tsitska, Krakhuna, Aladasturi Rose, Aladasturi, Otskhanuri Sapere, Pet Nats, and Chacha. Following the classical Imeretian method, we incorporate 30% grape skin during the fermentation of white wines and 100% skin contact for reds, lasting three months. Baia's Wine, a small family winery in Obcha, western Georgia, represents three generations devoted to organic winemaking. Baia, at 27, produces organic white wines since 2015; her sister Gvantsa, pursuing a master's in agricultural science, crafts red wines, and the youngest, Giorgi, studies enology. All wines use grapes from their Obcha vineyards and age in the family cellar. Obcha's unique micro-climate, east of the Sairme mountains, provides an ideal environment. At 324 meters above sea level, with a balance of geography, micro-climate, and well-drained soil, the land produces premium wine grapes. Hosting wine and food tours, the family sources locally for their kitchen and contributes to the community. Since 2017, Baia's Wine exports to the USA, a dream realized through Gvantsa's participation in the USA embassy entrepreneurship program. The first pallet marked a significant achievement. Every bottle is crafted with love, reflecting the family's dedication to traditional Georgian winemaking.
